Simple Chicken, Turkey, Tuna, or Shrimp Pasta

I don't recommend eating pasta with tomato sauce on a day when your IBD symptoms are active, let alone when you are flared-up, because of the acidity. Since I am a pasta lover, I figured out a way to still eat pasta and not have my family complain about the lack of flavour. You can try this next recipe with rice noodles instead of pasta noodles.

Ingredients:

-1 chicken or turkey breast, 1 can of flaked tuna in water, or 1 340g bag of shrimp (unfrozen)
-1/2 900g package of pasta noodles
(If you have a gluten intolerance, try making this dish with rice noodles instead.)

-1/8 cup (30 ml) of dry parsley
-1/2 teaspoon (2.5 ml) of salt
-1/2 teaspoon (2.5 ml) of ground black pepper 1/3 cup (80 ml) of olive oil
-1 tablespoon (15 ml) of balsamic vinegar

-Parmesan cheese (optional)

Recipe and cooking instructions:

-If you choose to make this dish with chicken, turkey, or shrimp, place them in a pot of bowling water to cook; 20 minutes for the chicken or turkey, and 10 minutes for the shrimp. Remember to remove the tails of the shrimp before putting them in the water. (You can test to see if the chicken or turkey is ready by putting a breast on a plate and cutting into the meat. If the inside is still a shade of pink, continue to cook! Shrimp on the other hand, will turn pink when cooked. If they are already pink when you bought them, it's because you bought them pre-cooked.)

-Pour water into a pot to cook your pasta or rice noodles. (Follow the cooking instructions on the package.)

-When your pasta or rice noodles are ready, drain them.

-Return the pasta or rice noodles into the pot and add 1/8 cup (30 ml) of dry parsley, 1/2 teaspoon (2.5 ml) of salt, 1/2 teaspoon (2.5 ml) of ground black pepper, 1/3 cup (80 ml) of olive oil, and 1 tablespoon (15 ml) of balsamic vinegar.

-Add a drained can of flaked tuna, 1 boiled chicken or turkey breast cut into pieces, or cooked shrimp into the pot.

-Mix everything together, and heat on low for a couple of minutes to warm everything up.

-Turn off the burner when the food is warm.

-Serve.

-If you can handle dairy, sprinkle parmesan cheese on your plate (Not recommended when you are flared-up!)

Suggestion: Although I did not include any vegetables in this recipe, boiled green, red and/or yellow peppers as well as zucchini are good additions to this dish if you can stomach them.
