Rice and Chicken or Turkey Meal
(4 servings)
If you have a gluten intolerance or have filled your fibre quota for the day, this is a good and simple meal to make.
Ingredients:
-1 chicken or turkey breast (unfrozen)
-2 cups of white rice
-4 carrots
-Soya sauce (optional)
Recipe and cooking instructions:
-In a large pot, cook 2 cups of white rice. (Follow the
cooking instructions on the package.)
-Turn the burner off when the rice is cooked. Cover the pot
with a lid to keep warm.
-In a second (smaller) pot, cook 4 peeled and thinly sliced
carrots; boil for about twenty minutes.
-Turn the burner off when the carrots are cooked.
-In a third pot, boil 1 chicken or turkey breast for about
twenty minutes. (You can test to see if the chicken or
turkey is ready by putting the breast on a plate and cutting
into the meat. If the inside is still a shade of pink, continue to cook!) If you have leftover poultry from a previous meal,
you can use that instead.
-Turn the burner off when the chicken or turkey is ready. -When everything is ready, mix the chicken or turkey as well as the carrots into the pot of cooked rice.
-Serve.
-If you can stomach soy sauce, add some to your liking.
